This weather is treacherous whether you’re at home, on foot or in the car. It’s so important to watch your step, invest in some rock salt and keep it handy. I keep a large sauspan filled with salt so it’s easy to scatter in front of me as I walk to the car, also to scatter on the path around the car so no one will slip getting in and out. Already the evenings are lengthening a little bit and let’s hope we escape the horrific snow falls of a few years ago.

1 head cauliflower 2 large eggs 1/2 c cheddar cheese, grated 1/2 c panko (found in the bread crumb aisle, healthier option) 1/2 t cayenne pepper (more of less to taste) salt olive oil Cut cauliflower into florets & cook in boiling water until tender about 10 minutes. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, panko, cayenne & salt to taste. Coat the bottom of a griddle or large frying pan with olive oil over medium-high heat.

Form the cauliflower mixture into patties about 3 inches across. Cook until golden brown & set, about 3 minutes per side. Keep each batch warm in the oven while you cook the rest.

I’d an interesting conversation with a woman called Clodagh who suffers from Fibromyalgia. When you break it down, ‘fibro’ stands for fibre, ‘my’ for muscle and ‘algia’ is pain. Fibromyalgia can effect the whole body or parts of the body, it can come and go, it can manifest after a traumatic event or it can begin without any obvious trigger. The only one who helped was a rheumatologist who encouraged her to keep active and take an interest in group activities. Not exactly what she expected. Someone else suggested she took up palates or yoga but it was too painful.

Sister Carmel is a Sister in the Rosminian Order based in north Belfast, She has had the condition for the last 12 years and she sometimes thinks the tiredness is even worse than the pain. “Some people consider it’s best to work through it but I feel I’m best to take a break when I’m at my worst, sit down for a while or lie down to gather my strength. I have arthritis in my knees but I knew what I was experiencing was something else and when the doctor referred me to the Royal Victoria Hospital a doctor there checked pressure points and immediately said – Fibromyalgia.

“I realise there’s no cure only management and with the help of the drug amitriptyline and rest I can manage.” More women than men experience this disorder and more young people are joining their numbers, 3% of the population here. There are support groups throughout Northern Ireland, although not in North Belfast but Sister Carmel is determined to put this right. For Clodagh it’s been a frightening experience. When she was able, she could only walk very slowly and lifting the kettle to make a cup of tea was beyond her. Her marriage was under strain and although at first the family were sympathetic, then tolerant, soon they got fed up. The only drink she could tolerate was water. After careful monitoring she took control of her diet leaving out the items that had a bad reaction and taking more fresh food, vegetables and fruit. The antidepressants were slowing her up so she tried to cut them down until eventually she took a turn for the better but still she insists everyone should ask the doctor about management and especially about symptoms as many are common to other illnesses.

“The more I thought about it the more determined I was to get on top of it,” she said, “I can’t tell you how important a positive outlook is although when my aunt came to visit and stay for a week last year, she depressed me so much I took a relapse and went back a few steps. Her attitude was I should get on with life and stop looking for sympathy. She said she was the only one who could talk to me straight seeing she was older than me and family. She just didn’t have a clue.” But Clodagh was determined not to allow anyone to influence her determination. She’d read about Fibromyalgia, every book, every pamphlet. and joined a local support group. “Understanding the disorder helped me and when I began to realise that I might end up in a wheelchair, I had to do something positive.” She’d been the one who ran the house, organised the family business, lifted and laid and above all coped with whatever was thrown at her but Fibromyalgia floored this middle aged woman. “However, I kept strong and when I was ready I joined the local drama group, a choir and with exercise and a suitable diet I began to feel better.” She smiled and asked: “What do you think?”

There was no doubt. When I first met Clodagh about five years ago she was pale, seemed distracted and forgot her train of thought. When we met again a few weeks ago she was confident, dressed beautifully in bright colours, subtle make-up and a new hair do. She still suffers Fibromyalgia and reckons she’s in remission at the moment but she is one of the more fortunate ones who has done what she can to overcome the illness that has devastated her life for the last 15 years.
